A fine-aged low alcohol sparkling tea which is fermented and matured on the lees like you would in a Champagne. This is part of their Elusive Cuvées or limited editions which see and impressive two years of maturation before release. The delicate variety, also known as Bai Mudan, Chinese White Peony from Anshun, Guizhou Province, is handpicked from tender spring buds and fresh new leaves before being crafted into this rare cuvée pét-nat tea. This lends to a delicate complex drink showcasing notes of passion fruit, apricot, brioche, and soft tannins, with a pale golden colour and delicate bubbles.
