These producers take care to use carefully sourced ingredients and take inspiration from ancient recipes and methods to create things you'll want to drink forever.
 

1. Ama Brewery Elusive Cuvées Vol 3. Chinese White Peony, Basque, Spain 1.5%
Ama Brewery combines the Kombucha process with winemaking techniques. Using unique top tea and herbs varieties sourced in collaboration with Rare Tea Company, they create some of the most refined low alcohol drinks. The Ama Chinese White Peony is a limited edition with extensive lees ageing, exactly two years in bottle before release, allowing for a delicate mousse and complex aromatics to develop. The Chinese White Peony, also known as Bai Mudan is sourced from Anshun, Guizhou province. This is hand picked from tender spring buds and fresh new leaves before being crafted into this rare cuvée. Aromatic roasted apple, peach and fresh cream on the nose, are followed by tropical tones of pineapple alongside savoury walnut and hay notes on the finish.

2. MURI x The Four Horsemen, Copenhagen, Denmark 0.4%
Muri's non alcoholic beverages combine beautifully sourced, often foraged ingredients with the art of fermentation. Different ferments, fruits, herbs or teas are blended together to create wonderfully complex drinks. This is a collaboration with the Michelin-starred The Four Horsemen restaurant in Brooklyn NY. A silky still red made from Stevnsbær sour cherry wine, ice-clarified tomato water, lacto-fermented beetroot, bayleaf and green peppercorn water kefir. 

3. Botivo Non Alcoholic Aperitif, Hertfordshire, UK 0.0% 50cl
This famous aperitif was inspired in an old maceration technique named 'Oxymel', blending honey with raw cider vinegar and series of botanicals and aromatic roots. These include Rosemary, Thyme, Gentian, Wormwood, Orange Zest, resulting in a drink full of flavour, refreshing bitterness and zest. This should be served with soda water and a wedge of orange or lemon. Each bottle contains 20 servings and can left open for a year!
