1. Domaine de Bichery 'Les Fontaines' 2019, Champagne, France
The story of Domaine de Bichery intertwines family legacy, personal journeys, and a deep-rooted commitment to mindful winemaking. Raphaël and Hannah run this beautiful estate in the Côtes des Bars and alongside with some other dynamic winemakers in the region they are turning the page in the history of Champagne, focusing on more environmentally friendly practices and a minimal intervention approach. Their rosé Champagne 'Les Fontaines' is a Pinot Noir based sparkling with 15% of the grapes being vinified as a red and harvested 2 weeks later. This provides extra richness depth of flavours. Expressive ripe red cherry, goji berries, liquorice and blossom notes. The fruit is bright, yet concentrate and layered, with a lovely bite on the palate. Very gastronomical style.

2. Arnaud Lopez Hautes Côtes de Nuits 'En Chevrot' 2021, Burgundy, France
On the contrary of what some think, Arnaud Lopez isn’t a "young talent in the making”, but rather a man of experience who came from a different background to master winemaking in our of the most demanding wine regions in the world. Arnaud is originally from Burgundy, New Saint Georges and joined the legendary estate Prieuré Roch in 2007 where he has mastered his craft. Today, his négoce wines are among the most sought-after, celebrated for their balance, distinctive character, and undeniable charm. We've held on to one single case, reserved for the festive season - when it's gone, it's gone! These wines need no elaborate description; expect a precise style with ever changing layers and fine tannins. 

    3. Maison Stephan Côte-Rotie 'Les Binardes' 2019, Rhône, France
    Maison Stephan is a trailblazing family estate in the renowned appellation of Côte-Rôtie, known for its pioneering spirit and unwavering commitment to organic and biodynamic farming. Founded by Jean-Michel Stephan, the domaine produced its first wine in 1994, after initially selling grapes to renowned producers like Guigal. Their Côte-Rotie 'Binardes' is made of the traditional blend of Syrah with a small percentage of the white grape variety, Viognier. Here grapes are harvested and fermented whole and the wine is matured in neutral stainless steel, in order to fully express Syrah in his purest form. Expect deep crunchy blue plums, heady violets, crushed black pepper and earthy undertones. Can be enjoyed now but also will also develop well with extensive ageing.
